A recipe for tomato soup with a twist. This soup is especially delicious thanks to the basil. Enjoy a crock today!
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 onion, chopped
3 cloves garlic, minced
1 teaspoon sea salt
2 cups chicken stock
1 can chopped tomatoes
1 tablespoon honey
¼ cup sour cream
¼ cup fresh basil, chopped
Freshly ground black pepper
Heat oil and butter in a pot over a medium heat. Add the onion, garlic and salt and sauté until onions are soft and translucent. Add in the stock, tomatoes and honey and simmer for about 15 minutes.
Let the soup cool slightly and put ½ of it into the blender with the sour cream. Blend until smooth. Transfer to another pot. Blend the other half of the soup and add. Warm the soup and garnish with basil and pepper before serving.
You can substitute the chicken stock with vegetable stock.
