If you’re craving for cheesecake but want to skip the calories, here’s the answer to your prayers. Tofu Cheesecake is a healthy and equally flavorful alternative to traditional cheesecake. Enjoy a slice of cheesecake minus the guilt.
1 1/2 lbs. silken tofu
1 cup sugar
12 oz. soy cream cheese
1 tablespoon vanilla extract
1 Graham cracker pie crust
2 cups fresh strawberries
Preheat the oven to 325 deg. F.
In a blender, purée the tofu until smooth. Add the sugar, soy cream cheese, and vanilla, and blend further until smooth.
Pour the tofu mixture into the prepared pie crust and bake for 50 minutes, or until the top turns golden brown. Take the cheesecake out of the oven and cool to room temperature. Keep the cheesecake in the refrigerator overnight. Serve chilled, with the fresh strawberries on top.
Variation: Add 1/2 cup cocoa and an extra 1/4 cup of sugar for a chocolate flavored cheesecake.
