Three Bean Salad is a traditional summer dish. All it takes is a few minutes to whip us this authentic recipe. Green beans, wax beans and kidney beans all brought together in a vinaigrette dressing. Mmmm…fresh and flavorful!
1 can green beans, drained
1 can wax beans, drained
1 can kidney beans, drained
1 cup chopped green bell pepper
2/3 cup chopped green onions
2/3 cup apple juice
1/3 cup cider vinegar
2 teaspoons sugar
1/2 teaspoon pepper
1/4 teaspoon dry mustard
1/4 teaspoon paprika
1/8 teaspoon dried oregano
Combine all the beans, the bell pepper and the green onion in a large bowl and toss gently. In a screw-top jar, combine the apple juice, vinegar, sugar, pepper, mustard, paprika and oregano. Close the jar with the lid and shake vigorously. Pour the vinaigrette over the salad in the bowl and toss gently. Cover and chill for 2 hours before serving.
If you don't have wax beans, you could try using garbanzo beans.
