Sweet Potato Salad

Sweet potatoes are loaded with nutrients and a good reason for you to whip up this easy to prepare salad. The natural sweetness of the potatoes is offset by the tangy mango chutney and fresh pineapple. Healthy food that’s high on the taste quotient as well!

Ingredients: 

Serves 4
2 large sweet potatoes
2 stalks diced celery
1 diced red bell pepper
1 bunch sliced green onions
1 cup fresh or canned chopped pineapple
1 cup cooked, chilled barley
1 cup fat-free mayonnaise
¼ cup mango chutney
¼ cup chopped fresh mint leaves

Directions: 

Cook the sweet potato cubes until they are just tender. Peel and cut the sweet potatoes into ½ inch cubes. Combine the sweet potato cubes with the remaining ingredients and mix well. Serve chilled.

Tips: 

You could try this recipe keeping the skins of the sweet potato intact. The skins are rich in nutrients and provide added texture to a dish.
