There's nothing like hot soup on a cold day. Here's a simple recipe for making classic stuffed pepper soup.
2 lbs ground beef
1 can tomato ketchup
1 can tomatoes, diced but undrained
2 cups cooked long grain white rice
2 cups green bell pepper, chopped
2 beef bouillon cubes
1/4 cup brown sugar
Salt and pepper to taste
In a large saucepan, brown the beef and drain. Add the ketchup, tomatoes along with the liquid, rice, bell pepper and bouillon cubes and bring to a boil. Reduce heat. Cover and simmer for 30 minutes.
If you feel the soup is too thick you could add half a cup of water to it.
