Here's a super quick and easy way to make spicy grilled chicken. Just get all the ingredients together in a zip-lock bag, chill overnight and grill. A really simple recipe for a delicious chicken dinner.
3/4 cup finely chopped onion
1/2 cup grapefruit juice
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon honey
1 minced garlic clove
Salt and pepper to taste
1 1/2 teaspoons rubbed sage
1 1/2 teaspoons dried thyme
1 teaspoon ground allspice
1 teaspoon garlic powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
6 boneless chicken breast halves
In a large zip-lock bag, combine the onion, grapefruit juice, olive oil, soy sauce, honey, garlic, salt, pepper, sage, thyme, allspice, garlic powder, cinnamon and nutmeg and mix well. Keep aside1/3 cup of the mixture in the refrigerator. To the remaining mixture, add the chicken and toss to coat evenly. Seal the bag and refrigerate overnight.
Discard the marinade. Grill the chicken, uncovered, over a medium heat for 3 minutes on each side. Use the marinade that you had set aside for basting the chicken. Grill for a further 8 minutes or until juices run clear. While grilling, continue basting and turning the chicken over several times.
Instead of using a zip-lock bag you can also marinade the chicken in a glass bowl. Just make sure you cover the bowl while refrigerating the chicken.
