Roast Pork

A traditional recipe for succulent, mouth-watering roast pork. 

Ingredients: 

Serves 3

1 small leg of boned pork

1 tablespoon olive oil

Salt

For the stuffing:

1 lb. onions

4 oz. fresh white breadcrumbs

1 oz. melted butter

2 rounded teaspoons dried sage

Salt and pepper to taste

 

Directions: 

Peel and cut the onions in half. Add the onions to a pan of boiling salted water and cook for about 15 minutes. Drain the onions and then chop them finely. In a bowl, mix the onions, breadcrumbs, melted butter, sage, salt and pepper. Your stuffing is done.

 

Next, wipe the joint of meat with a damp cloth. Stuff the cavity with the prepared stuffing and tie the joint up firmly. Rub in the olive oil into the skin, followed by the salt.

 

Place the joint in a meat tin, keep it on the rack and roast in a moderately hot oven at 375 deg. F – Mark 5 for 35 minutes and then 30 minutes on the reverse.

 

Tips: 

Serve this roast pork with apple sauce on the side.
