Rice Krispies Treats are so simple to make, even your kids can make them. Crunchy bars of cereal enveloped in melted, buttery chocolate. Mmm…eat them as a snack or as dessert.
Makes 20 bars
2 tablespoons butter
5 oz. marshmallows
3 cups rice krispies
For the filling:
1/2 cup butter
3/4 cup crunchy peanut butter
1 1/2 cups confectioners’ sugar
1 tablespoon milk
For the topping:
1/4 cup butter
1 cup semisweet/dark chocolate chips
Lightly grease a 9×9-inch pan.
In a microwave safe bowl, combine butter and marshmallows. Heat the bowl in the microwave, until the butter and marshmallows are soft. Mix well. Add the rice krispies and give it a gentle mix. Pour the mixture into the prepared pan and press it into an even layer. Let the rice krispies mixture cool and until it sets.
For the filling: Combine all the filling ingredients in a medium bowl and beat until smooth. The consistency should be like frosting. Spread this filling on the rice krispies layer in the pan. Spread onto cereal layer.
For the topping: Combine chocolate chips and butter in a small, microwave-safe bowl. Heat the bowl in the microwave until both the chocolate chips and butter have melted. Stir until smooth. Pour over the filling layer. Use a spatula to smoothen this top chocolate layer. Let the topping layer set up at room temperature before slicing into bars.
If it you find that the filling mixture is too crumbly, add an additional tablespoon or two of milk until it becomes spreadable.
