Pumpkin Cookies

Baking everyone's favorite pumpkin cookies was never this easy. Try this quick recipe for super crisp and crumbly cookies.

Ingredients: 

1 can pumpkin
4 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 cup light brown sugar
1 cup melted butter
2 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon maple extract
1 teaspoon vanilla extract
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon baking soda
4 eggs
1 cup pecan halves

Directions: 

In a large bowl, combine the pumpkin, flour, sugar, butter, baking powder, cinnamon, maple and vanilla extracts, ginger, cloves, baking soda and eggs. Beat well until smooth.

Preheat oven to 350 deg F. Using a tablespoon, drop about two spoonfuls of dough for each cookie, onto ungreased baking sheets. Press a pecan half into the center of each cookie drop. Bake for 20 minutes or until golden brown. Loosen the cookies with a spatula and move to a wire rack to cool.

Tips: 

This cookie dough can be stored in the freezer for later use.
