Aromatic, fine-grained rice that is simply bursting with whole and powdered spices. Try this authentic Indian recipe to go along with curries.
Serves 2
1 teaspoon oil
1 chopped onion
1 teaspoon garam masala
1 teaspoon turmeric
1 clove chopped garlic
1 teaspoon chopped fresh ginger
4 lightly crushed cardamom pods
1 star anise
3 cloves
1 cup basmati rice
4 tablespoons sultanas
2 cups chicken stock
Salt to taste
Heat the oil and fry onion until softened. Add in the garam masala, turmeric, garlic, ginger, cardamom, star anise, and cloves. Sauté the spices for about 2 minutes. Make sure you don’t burn them. Add rice, sultanas, and stock and mix well.
Simmer for 10 to 15 minutes till the rice is cooked. Season and serve immediately.
Garam masala is a combination of ground spices such as cinnamon, cloves, cardamom, whole black pepper and mace. It is available in a ready to use form at most Indian stores.
