Description:

Many of us are foxed when it comes to cooking prime rib. How long should you cook it for? What if the weight given in the recipe is more than the weight of the meat you actually have with you? This recipe for prime rib shows you how to cook a perfect prime rib and gives you a guide to prime rib cooking time.

Ingredients:

2 tablespoons Dijon mustard
2 teaspoons dried thyme
6 garlic cloves, minced
Salt and pepper to taste
Prime Rib Roast
For the Dipping Sauce:
1 can French Onion soup
1 can beef broth
1 can cold water
1/2 teaspoon white sugar
2 teaspoons Worcestershire sauce
1/8 teaspoon salt

Directions:

1/8 teaspoon salt

In a small bowl combine the mustard, thyme, garlic, salt and pepper. Brush all over the roast.

Preheat oven to 500 deg. F. The cooking duration for the roast will depend on the weight of the roast. As a rule of the thumb, each pound of meat should cook for5 minutes. So if the roast weighs 5 pounds, it should cook for 25 minutes. Turn off the oven exactly at 25 minutes. Now keep the oven door closed for the next 2 hours as the roast will still be cooking. Serve with the dipping sauce.

For the dipping sauce:
Bring all the ingredients to a boil in a saucepan. Strain and discard the onions.

Tips:

You can make the dipping sauce two days ahead and let it stand so that all the flavors merge into each other nicely.
