Here's a recipe for a simple but delicious potato soup. A creamy and filling soup that's sure to delight your family.
2/3 cup butter
2/3 cup flour
7 cups milk
4 large potatoes, baked, cooled, peeled and cubed
4 green onions, thinly sliced
10 strips bacon, cooked, drained, and crumbled
1 1/4 cups shredded mild cheddar cheese
1 cup sour cream
Salt and pepper to taste
In a large pot melt butter over a low heat. Stir in the flour and stir until smooth and bubbly. Gradually add in the milk until the sauce has thickened. Add in the potatoes and onions. Continue to cook, stirring constantly, until the soup begins to bubble. Reduce the heat and simmer gently for 10 minutes. Add in the bacon, cheese, cream, salt and pepper and stir until the cheese has melted.
Add a tablespoon of chopped parsley just before serving.
