1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup creamy or chunky peanut butter
1/2 cup butter
1/2 cup light brown sugar
1/2 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Preheat oven to 400 deg. F.
In a medium bowl sift together the flour, baking powder, baking soda and salt.
In another bowl, combine the peanut butter, butter, brown sugar, and granulated sugar and beat until smooth.
Add in the egg and vanilla and mix well.
Finally, add in the flour mixture and continue beating until all the ingredients are well-blended.
Cover the bowl and place in the refrigerator for 30 minutes.
Using a teaspoon, drop spoonfuls of dough on an ungreased cookie sheet. Make sure you leave at least 1 inch space between each spoonful of dough.
Flatten each ball of dough and use a fork to make criss-cross patterns on top.
Bake for 10 minutes.
