Mexican Corn Salad

If you're having a Mexican theme dinner, how about a corn salad to start off the meal? This recipe for Mexican corn salad is delicious as well as really easy to prepare.

Ingredients: 

1 can whole-kernel corn, drained
1/4 cup chopped cucumber
1/4 cup chopped tomato
1 tablespoon chopped green onions
3/4 teaspoon minced, deseeded jalapeƱo pepper
2 teaspoons fresh lime juice
1/2 teaspoon vegetable oil
1/8 teaspoon ground cumin
Salt and pepper to taste

Directions: 

Combine the corn, cucumber, tomato, green onions and jalapeno peppers in a bowl and toss well.
In another bowl, combine the lime juice, vegetable oil, cumin and salt and pepper. Stir with a whisk. Pour the lime juice mixture over the vegetables and toss well. Cover and chill for at least 2 hours. Just before serving, stir the salad.

Serving suggestion: Serve this salad as a side to enchiladas or burritos.
