Mashed Potatoes

Who doesn’t like the sight of mounds of creamy, mashed potato oozing with butter? The ultimate comfort food that is a great accompaniment to almost anything.

Ingredients: 

Serves 4-6
2 lbs. potatoes
1 teaspoon salt
½ cup milk
½ cup single cream
6 tablespoons butter
Salt and pepper to taste

Directions: 

Boil potatoes until they are tender when pierced with a knife. Drain the potatoes well and leave them to cool. Once the potatoes have cooled, peel them. Mash the potatoes well till smooth. Blend in the butter, milk and cream. Season to taste.

Tips: 

For a more exotic, herbed version, blend in a teaspoon of chopped mixed herbs.
