Try this recipe for traditional Italian Biscotti. Make this classic dish from scratch and wow your friends and family!
3 1/3 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
Wet Ingredients:
1/4 cup canola oil
1 1/4 cup sugar
2 large egg whites
2 large eggs
1 teaspoon finely grated lemon zest
1 teaspoon finely grated orange zest
1 teaspoon almond extract
1 teaspoon vanilla
Sift together the flour, baking powder and salt in a bowl. In another bowl, beat the wet ingredients together until well blended. Gradually stir the dry ingredients into the wet ingredients, a little at a time until well blended and smooth. Shape the biscotti dough into two even shaped logs. Leave space between the two logs as they will need space to expand. Flatten each log slightly. Bake for 25 minutes at 400 deg F.
Allow the logs to cool for about 10 minutes on a wire wrack. Transfer the logs onto a cutting board and slice diagonally. Lay the slices sideways on the baking sheet and bake for a further 10 minutes. Turn the slices over and the bake for another 5 minutes.
You may find the dough a bit sticky so dust your hands lightly with flour before beginning to shape it.
