A recipe for a perfect meal of juicy, tender prime rib that seem to just melt in your mouth. The added flavor of garlic makes the prime rib just that much more gourmet!
2 teaspoons ground black pepper
10 cloves garlic (minced)
Prime rib roast, weighing about 8 lbs.
2 teaspoons dried thyme
2 tablespoons olive oil
2 teaspoons salt
Roast the rib in a roasting pan with the fatty side up.
Mix garlic, olive oil, salt, pepper and thyme in a small bowl.
Spread the mixture evenly over the fatty layer of the roast and keep it aside for about an hour.
Preheat the oven to 500 deg. F and bake the marinated rib for 20 minutes.
Reduce the temperature to 325 deg. F and continue roasting for another hour.
Serving suggestion: Try serving garlic prime rib with Yorkshire pudding for that traditional touch!
