Fried Tofu

Tofu squares marinated in a soy-orange-lemon-mirin mix and deep fried till golden and crisp. An easy to prepare recipe that is simply loaded with nutrients. Serve fried tofu with a choice of dips.

Ingredients: 

1 large block of firm tofu
1/2 tsp fresh, minced ginger
zest of 1 lemon
1/4 cup orange juice
1 tablespoon soy sauce
1 tablespoon mirin
1/2 tsp rice wine vinegar
1/2 cup breadcrumbs
Salt and pepper to taste
1 egg yolk

Directions: 

Drain the tofu and blot out any excess water using paper towels. Slice the tofu into two thinner blocks.
Combine the lemon juice, orange juice, soy, mirin, rice wine vinegar and ginger in a small saucepan. Simmer on a low flame for 5 minutes. Season with the salt, pepper and lemon zest and set aside.
Dip each block of tofu first in the egg yolk, and then roll it in the breadcrumbs.
In a nonstick skillet, heat about 2 tablespoons of cooking oil on a moderate heat. When oil is hot, but not smoking, carefully slide in the tofu halves. Fry each side for about 2 minutes before turning it over. Keep frying the tofu slices until they have a golden brown crust.
When serving, place each tofu slice flat and spoon a little of the lemon-soy mixture on top.
Try serving crisp, fried tofu with a salad on the side.

Tips: 

Mirin is a sweet, cooking wine used in Japanese cooking. It is quite readily available at most Asian stores.
