A quick and simple recipe for egg salad the old-fashioned way. Serve this salad on lettuce leaves or on slices of French bread.
1/4 cup mayonnaise
2 teaspoons lemon juice
1 teaspoon minced onion
Salt and pepper to taste
6 chopped, hard-boiled eggs
1/2 cup finely chopped celery
In a bowl, combine the mayonnaise, lemon juice, onion, salt and pepper. Stir in the eggs and celery. Cover and chill. To serve, spoon about 1/2 cup of the salad onto a lettuce leaf.
You could also use serve this salad on slices of French bread.
