Succulent, moist and tender pork roasted to perfection and glazed with apple and honey-mustard. This recipe is quick to cook and simply mouthwatering. Each slice of pork roast is sure to tantalize your taste buds.
3 lbs. pork loin roast
4 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, chopped
2 cups apple juice
1/4 cup honey
1 tablespoon dry oregano
1 teaspoon dry rubbed sage
2 tablespoons Dijon mustard
1 teaspoon lemon juice
1 tablespoon Worcestershire sauce
Salt and black pepper to taste
Heat 3 tablespoons of olive oil in a saucepan. Add the onions and garlic and cook on a high heat till the onions are soft. Add apple juice and cook until about half of the liquid has evaporated. Add honey, oregano and sage and continue cooking until the glaze is thick enough to coat the back of a spoon. Add the mustard, lemon juice, Worcestershire sauce, salt and black pepper to taste. Mix well and take off the fire.
Preheat oven to 350 deg. F. In a large pan, heat the remaining olive oil. Add the pork and cook on a high heat for about 5 minutes. Kep turning the meat so that it gets seared on all sides. Place in the oven and roast for 45 minutes. Insert a meat thermometer into the pork and cook till the temperature reads 135 deg. F. Slice the roast and serve.
Brush the pork with the glaze at least 3 or 4 times while it is roasting so that the meat turns out moist.
