If you’re longing for chewy, crumbly peanut butter cookies but don’t have the time for an elaborate recipe, here is your solution. A recipe that’s simple to make but high on taste.
1 cup creamy peanut butter
1 cup butter, softened
1 cup light brown sugar
1 cup granulated sugar
2 large eggs
2 ½ cups all-purpose flour
1 ½ teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Combine the peanut butter, butter, white and brown sugar together in a bowl and beat until fluffy. Add the eggs on at a time and continue beating the mixture.
Sift together the flour, baking soda, baking powder and salt. Add to the peanut butter mixture.
Place the cookie mixture in the refrigerator for 3 hours.
Preheat oven to 325 deg F.
Roll the cookie mixture into 1 inch balls. Using the back of a spoon, flatten each ball. Bake for 15 minutes or until the cookies start turning brown.
Allow at least 2 inches space between each ball of cookie mixture, to allow it to expand while baking.
