1 cup light mayonnaise
1 cup mashed bananas
1 tablespoon nutmeg powder
2 cups all purpose flour
2 teaspoons baking powder
1 cup sugar
Pre heat the oven to 350 deg.F.
Mix the mayonnaise and mashed bananas in a bowl. Sieve the dry ingredients and add to the wet mixture. Mix with hand until smooth.
Grease and dust the loaf pan. Pour the mix into the pan and bake for about an hour.
Use over-ripe bananas for best results.
