Diabetic Cookies

This recipe is for all cookie lovers on a diabetic diet. Crisp, crumbly cookies, soft inside and flaky outside and completely sugar-free!

Ingredients: 

2 eggs
2 tablespoons water
5 teaspoons granulated sugar substitute
1 teaspoon ground cinnamon
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt

Directions: 

Combine the eggs and water in a bowl and beat until frothy. Add in the sugar substitute and cinnamon and continue beating until well blended.

Sift together the flour, baking soda and salt. Fold in half of the flour mixture into the egg mixture and blend well. Next, fold in the remaining flour mixture and blend until smooth.

Using a teaspoon, drop spoonfuls of the cookie dough onto greased cookie sheets, 2 to 3 inches apart.

Bake at 375 deg F for 10 to 12 minutes.

Tips: 

If you would like the cookies to have a softer center, just reduce the baking time by a few minutes.
