A recipe for an Asian style cucumber salad. An exotic combination of cucumber, Thai cili peppers, cilantro and roasted peanuts.
1/4 cup rice vinegar
1/4 cup granulated sugar
3 tablespoons water
1/2 teaspoon salt
2 cucumbers
1/2 cup finely chopped white onion
10 chopped, fresh mint leaves
1 tablespoon chopped fresh cilantro
1 fresh Thai chili peppers
2 tablespoons chopped, dry roasted peanuts
Halve the cucumbers lengthwise and slice them thinly. Deseed and thinly slice the Thai chili peppers. Combine the vinegar, sugar, water and salt in a medium bowl. Whisk until the sugar dissolves. Add in the cucumber, onion, mint, cilantro and chili peppers. Toss until evenly coated. Allow the salad to rest for 15 minutes. Garnish with peanuts and serve.
This salad goes well with barbeque chicken.
