This salad uses whole kernel corn, green onions and jalapeno peppers for a delicious start to any dinner. The crumbled bacon and jack cheese add to the flavor.
1 packet frozen whole kernel corn
8 slices fried bacon
3 fresh garlic cloves
2-3 fresh jalapeno peppers
2 green onions
1 cup grated jack cheese
Ranch dressing
Thaw out the frozen corn completely. Crumble the bacon. Deseed and chop the jalapeno peppers. Chop up the green stalks of the green onions.
In a large mixing bowl, combine the jalapeno peppers, green onions, garlic and the corn. Stir in enough Ranch dressing to coat the vegetables well. Then stir in the grated cheese, crumble the bacon on top and serve immediately.
You could also add chopped black olives to the salad along with the other vegetables.
