Cod is a fish that’s flaky and simple to cook. This recipe for Cod Portuguese coaxes out the delicate flavors from the fish and blends them with fragrant thyme and tangy cider to serve up a baked delight.
Serves 4
2 oz. butter
8 oz. boiled, sliced potatoes
1 chopped onion
8 oz. quartered tomatoes
Pinch of thyme
4 cod steaks (1/2 inch thick)
Salt and pepper
Juice of half a lemon
4 tablespoons cider
Parsley
Grease a shallow oven-proof dish with a small portion of the butter. Cover the base of the dish with the sliced potatoes and chopped onion. Add the tomatoes and sprinkle with thyme. Now arrange the cod on the vegetables and season with salt and pepper. Sprinkle lemon juice and cider all over the fish. Dot the fish with the remaining butter.
Cover and bake the fish in a hot oven at 400 deg. F – Mark 6 for 50 minutes. Garnish with parsley.
Be sure not to overcook the cod. You’ll know the fish is done, once it starts flaking.
