Chicken Tikka Masala

An authentic Indian recipe for Chicken Tikka Masala. Cubes of boneless chicken in a spicy, aromatic tomato sauce. Serve with naan bread or pulao rice.

Ingredients: 

3 tablespoons vegetable oil
1 large onion, peeled and sliced
2 green chillies, deseeded and chopped
1" piece of root ginger, peeled and chopped
3 garlic cloves, peeled and crushed
1/2 teaspoon paprika
1 teaspoon ground turmeric
2 teaspoons garam masala
1 tablespoon soft brown sugar
1 tablespoon tomato puree
1 lb. chopped tomatoes
4 boneless chicken breasts, cubed
6 tablespoons yoghurt
Fresh chopped cilantro

Directions: 

Heat 2 tablespoons of oil in a pan. Fry the onion in the oil. Add the green chillies, ginger and garlic and cook for 3 minutes or until tender.
Next, add the paprika, turmeric, garam masala and sugar and cook for another minute. Add the tomato puree and chopped tomatoes to the pan and allow them to cook for a further few minutes.

Transfer the sauce to a food processor and blend until smooth. Add a tablespoon of fresh oil into the pan and fry the chicken pieces until lightly coloured. Pour in the blended sauce. Simmer gently for 10 minutes or until the chicken is cooked through. Take off the fire. Stir in the yoghurt to the chicken along with the chopped cilantro.

Tips: 

Garam masala is a blend of various spices like cinnamon, cardamom, cumin etc and is readily available at most Asian stores.
