Chicken Stir Fry

Description: 

Asian style chicken stir-fried with broccoli, green onions and noodles. A quick and healthy dinner that is simple to make and oh-so delicious!

Ingredients: 

2 tablespoons olive oil
1 lb. chicken breasts, trimmed, sliced
2” piece root ginger, peeled, thinly sliced
2 garlic cloves, sliced
1 lb. broccoli florets
6 green onions, sliced diagonally
1 red capsicum, sliced
1 packet hokkien noodles
1/4 cup fish sauce
2 tablespoons lime juice
1 birds eye chilli, deseeded, sliced
1 tablespoon reduced sodium soy sauce

Directions: 

Heat a wok over a high heat until very hot. Add a tablespoon of the oil and half of the chicken. Stir-fry for a minute, or until golden. Remove to a plate. Add the remaining chicken, stir-fry till golden and set aside.
Add the remaining oil, ginger, garlic, broccoli, onions and capsicum to the hot wok. Stir-fry for 3 minutes, or until the vegetables are tender. Add the noodles and stir-fry for a minute.
Combine the fish sauce, lime juice, chilli and soy sauce in a bowl. Add the sauce to the wok along with the chicken. Stir-fry for another 2 minutes.

Tips: 

Garnish with half a cup of chopped, fresh cilantro leaves before serving.
