1 1/2 cups old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 cup raisins
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons unsalted butter
1/2 cup dark-brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Preheat oven to 350 deg F. In a medium bowl, whisk together the oats, flour, raisins, baking soda, and salt and set aside. Beat the butter and sugars together until light and fluffy. Add in the egg and vanilla and beat until well combined. Add in the oat mixture a little at a time and beat just until combined.
Using a tablespoon, drop spoonfuls of dough onto two baking sheets, leaving about 2 inches space between each drop of dough. Bake for 15 minutes or until the cookies are golden brown but still soft. Cool the cookies on a wire rack to cool completely.
