Carrot Cake

Description: 

Carrot Cake was never this scrumptious before. Bake it to believe it.

Ingredients: 

1 ½ cups plain flour
½ cup brown sugar
½ cup ground sugar
½ cup cocoa powder
1 teaspoon baking powder
¼ teaspoon baking soda
¼ cup chopped walnuts
2 cups grated carrot
¾ cup melted butter
¼ teaspoon vanilla extract

Directions: 

Grease a 9 inch square or rectangular cake tin and then dust it liberally with flour.
Sift together the baking powder, cocoa and soda with flour.
Add the melted butter and both the sugars and beat the mixture well.
Fold in the walnuts, carrot, and vanilla extract. Pour the mixture into the prepared cake tin.
Bake in a preheated oven at 400 deg. F for 10 minutes. Reduce the temperature to 300 deg. F and bake for another 30 minutes. Take out of the oven and leave the cake to cool for about 10 minutes before turning it out of the tin.

Tips: 

To check if the cake is done, insert a skewer in the centre of the cake. If it comes out clean, it’s time to take the cake out of the oven.
