Here's a recipe for a traditional Italian summer salad. A tasty and quick to make recipe that uses fresh mozarella and juicy red tomatoes.
4 large tomatoes
4 tablespoons extra virgin olive oil
1 1/2 tablespoons balsamic vinegar
1 package fresh mozzarella cheese
16 shredded basil leaves
Salt and pepper to taste
Slice the tomatoes about a quarter inch thick and arrange on a plate.
Slice thin circles of mozzarella cheese and place on top of each tomato. Garnish with a sprig of basil.
Combine the olive oil and balsamic vinegar in a small bowl and mix well. Pour the dressing over the tomatoes. Add salt and pepper to taste. Serve immediately.
For best results, use organically grown tomatoes.
