3 tablespoons soft butter
½ cup brown sugar
¼ cup yellow corn syrup
1 egg
½ teaspoon vanilla
½ teaspoon vinegar
¼ cup currants
¼ cup raisins
Combine brown sugar, yellow corn syrup, butter, egg, vanilla and vinegar in a bowl.
Now add raisins and currants. Spoon out the mixture into unbaked pastry shells. Bake at 425 deg.F for 5 minutes. Reduce temperature to 325 deg.F and cook for another 10 minutes. Cool and serve.
You could substitute the raisins and currants with chopped walnuts or pecan.
