Broccoli Salad

Crisp and crunchy broccoli salad is a great start to any meal.

Ingredients: 

2 heads broccoli
½ cup chopped onion
8 slices bacon
1 cup grated cheese

For the dressing:
1 cup mayonnaise
¼ cup vinegar
¼ cup sugar

Directions: 

Fry bacon until crisp. Drain on absorbent paper and set aside.
Chop broccoli into bite-size florets. Combine the broccoli with the onion, cheese and dressing in a salad bowl. Chill the salad for about 3 hours. Crumble the bacon, add it to the salad. Toss the salad and serve immediately.

Tips: 

For a cooked version of this salad, try plunging the broccoli into salted boiling water for a few minutes before adding it to the salad. Be careful not to overcook it.
