Broccoli Cranberry Salad

Description: 

A crisp and healthy salad of broccoli, cranberries, cashews and bacon. A flavorful beginning to just about any meal.

Ingredients: 

6 cups broccoli florets
1 1/2 cups dried cranberries
1 cup cashews
8 slices bacon, cooked and crumbled
1 cup mayonnaise
1/2 cup sugar
2 tabs balsamic vinegar
Salt and pepper to taste

Directions: 

Combine the mayonnaise, sugar and balsamic vinegar. Mix until well blended.

Toss the broccoli, cranberries, bacon and cashews together with the dressing until well coated. Season to taste. Serve cold.

Tips: 

You can substitute the cranberries with raisins if you like.
