Broccoli in Cheese Sauce

Description: 

Quick and simple broccoli topped with melted cheese sauce.

Ingredients: 

2 heads broccoli, cut into florets
2 tablespoons butter
3 tablespoons all purpose flour
1 ½ cups milk
1 cup grated cheddar cheese
Dash of hot pepper sauce
¼ teaspoon salt
¼ teaspoon pepper

Directions: 

Steam broccoli for about 5 minutes till tender but still crisp.

Melt butter in a saucepan over a moderate heat. Blend in flour and cook for 2 minutes.
Gradually whisk in the milk. Cook, stirring for 15 minutes or until thickened.

Take the sauce off the heat and stir in the cheese until it has completely melted. Add the hot pepper sauce, salt and pepper.

Place broccoli in a bowl, drizzle the cheese sauce on top and serve.

Tips: 

After adding the flour to the hot butter, keep stirring continuously with a wooden spatula to prevent the flour from sticking to the pan. Make sure the flour does not start turning brown.
