Black Bean Salsa is just bursting with flavors and textures. This recipe is incredibly simple to make. Just mix, chill and serve with tacos or tortilla chips.
2 cans black beans, rinsed and drained
1 can whole kernel corn, drained
3 tomatoes, coarsely chopped
1 large avocado, peeled and chopped
1 large onion, chopped
1/4 cup chopped fresh cilantro
4 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon salt
1/2 teaspoon pepper
Combine all ingredients in a large bowl. Cover and chill overnight so that all the flavors blend into each other.
You could substitute the cilantro with parsley for a slightly different flavor.
