A recipe for peanut butter cookies that uses both peanut butter and butter. The result is a sweet-salty cookies that are flaky, crisp and crumbly all at the same time.
1 cup crunchy peanut butter
1 cup butter
1 cup brown sugar
1/2 cup white sugar
2 large eggs
2 ½ cups flour
1 ½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
Preheat oven to 350 deg F.
Combine the butter and the peanut butter in a large bowl until creamy. Stir in the brown and white sugar. Add the eggs and beat the mixture until smooth. Next, add in the flour, baking soda, baking powder and salt and mix well.
Drop large scoops of the cookie mixture onto greased cookie sheets. Press each scoop and flatten it to about a quarter of an inch thick. Make sure you leave at least 2 inches of space between each cookie.
Bake for 12-14 minutes until golden brown.
For softer cookies, reduce the baking time.
