Rich and supremely creamy macaroni and cheese is a hot favorite. This baked version is topped with crusty, golden breadcrumbs that add a crunchy texture to the dish. Every forkful is loaded with oodles of cream and cheese - make sure you aren't on a diet!
2 cups cooked macaroni
1/4 cup flour
1/4 cup margarine
1 cup milk
1 cup cream
2 cups shredded cheddar cheese
1/2 cup bread crumbs
Fresh ground pepper and salt to taste
Combine flour, salt and pepper in a bowl. Heat the margarine in a pan and add in the flour mixture. Stir for 30 seconds and pour in the milk and cream and stir well. Bring to the boil. Reduce heat to moderate and cook for about 10 minutes. Add in the cheese, a little at a time. Keep cooking over a moderate heat till all the cheese has melted. Add in the macaroni and toss so that it gets evenly coated with the cheese sauce. Take off fire.
Place the coated macaroni in a baking dish and spread the breadcrumbs evenly on top. Bake at 400 deg. F till the top turns a golden brown.
After adding the flour mixture to the hot butter, make sure you keep stirring with a wooden spatula so that the flour does not stick to the bottom of the pan.
