4 boneless, skinless chicken breasts
1 cup long grain rice (uncooked)
1 1/2 cups chicken broth
1 can diced tomatoes, undrained
1/2 medium onion, chopped
1 garlic clove, minced
1 teaspoon dried oregano
3 cups fresh baby spinach, chopped
Preheat oven to 400 deg. F.
Arrange the chicken breasts in a single layer in a baking dish.
Combine the rice, chicken broth, tomatoes, onion, garlic and oregano in a medium bowl. Stir in the chopped spinach. Layer the mixture over the chicken. Cover the baking dish tightly with foil and bake for 35-40-minutes at 165 deg. F till both the chicken and rice are cooked through.
For best results, use plain, long-grained rice.
