Apple cinnamon muffins make a great breakfast. And here’s the icing on the cake(or the muffin in this case) – they are completely sugar free!
Makes 12 muffins
1 ¼ cup uncooked oat bran cereal
1 cup whole wheat flour
2 teaspoon ground cinnamon
1 teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
¾ cup unsweetened apple sauce
1 cup diced apple
½ cup honey
½ cup vegetable oil
1 egg
1 teaspoon vanilla extract
Preheat oven to 375 deg. F.
Line 12 medium size cups with paper baking cups.
In a bowl, sift together the oat bran cereal, flour, cinnamon, baking powder, soda and salt.
In another bowl mix applesauce, honey, oil, egg, and vanilla extract. Stir in the sifted ingredients and mix well. Stir in the diced apple.
Spoon the mixture into each prepared muffin cup till almost full. Bake for 15-20 minutes or until golden brown. Serve warm.
If you've run out of paper baking cups, just use a little vegetable oil to grease the muffin cups.
